Not exactly a luxury yacht, but there is of course the former seaplane carrier HMAS Albatross, originally built at Cockatoo Island in Sydney.
After it finished it service life with the Royal Navy it was converted in a passenger ship called the Hellenic Princess:

Probably the strangest looking conversion into a luxury yacht was by the late Aussie multi Billionaire Kerry Packer with his conversion of a ship called Arctic Research into the Artic P:
