China follows a totally different military doctrine, so, comparing China's military build-up to the likes of US and Europe is like comparing apple to orange. China is not going to amass a naval strike force in the middle of the pacific ocean in next 5 years.

When it comes to conflict in taiwan strait, China can still use its land based apparatus to amass a full scale strike against all military targets in taiwan and surrounding waters. Besides, China doesn't pursuit zero casualty in such conflict, of course I am not saying lives of the chinese soliders are lightly valued. Remeber what Don Rumsfeld said? "You don't go to war with what you want to have, you go to war with what you have." China doesn't seem want to wage a war within next couples years, but, if taiwan declares independence or Chinas feels it has to wage a war in taiwan strait, taiwan would probably be the last place anybody wants to be on the surface of this planet.

Because China wants to protect what naval assets it has. All its potential enemies (US, Japan, Taiwan) have strong airforces. Their main source of potential conflict would be over Taiwan or over the Senkaku/Daioyu "Islands".

(I say "Islands" because under UN law their considered nothing more than rocks)

Taiwan

If China initiated a naval blockade, the blockading ships would have to be able to protect themselves from attack by Taiwanese/American jets.

If China launched an actual invasion, it would have to protect its slow, unarmed transports from air attacks as well.

Territorial dispute

The JASDF has fighters stationed in Okinawa. Any attempt to take the Senkakus by force would require protection from their fastest response - the JASDF.

China has expressed interest in purchasing/building carriers. However there are issues, some of which have been mentioned before, that means this won't happen any time soon.

1. Despite the possibility of China's defence budget being higher than officially reported, the CCP isn't stupid enough to jeopardise their growing economy by pouring billions down the drain in research. Equally there aren't any nations which are likely to sell them any viable carriers at the moment.

2. The Chinese do not have the technological know-how to build their own carriers yet.

3. Working flat out to obtain carriers one way or another would badly upset the balance of power in the region and possibly prompt countries like Japan to build their own.

4. There are some Chinese politicians and military officers who do not think the PLAN needs carriers, saying that they're too vulnerable in the age of modern missile technology, and that the cost of defending them outweighs their ability to project air power.

Type 052C as i posted earlier will be an effective Carrier Escort.
India had a carrier 35 years ago and also used it in war,IN did not give massive escort to them,only 3 frigates were escorting it i suppose.
It's because India's rival is Pakistan. China's rival is Japan/USA, so they're no even on the same level, hence there's nothing valid to compare.

A few European nations was OFFERING to sell the PRC's mid-sized carriers (Spain atleast, just from the top of my head), but China refused as they're more interest in the blueprint (and they [sellers] probably ain't willing to sell it), so China bought nothing in the end in several occasions.
