I am 18 years old, majoring in aviation.
Scored in the 80's (ASVAB). Plan to enter as an officer with a BS in aeronautical science.

Should I find an ROTC group? Join OCS?

Do pilots have to relearn EVERYTHING upon Navy training?

Would I simply sign a contract for an aviation officer? will i be assigned to anything else if i don't get it? i have researched this and still don't understand the process.

Here's how it works in the Marines (you'll have to ask someone else about Navy, but I imagine it's similar). You sign up for OCS, and you sign a contract for your MOS. After you finish OCS, you go to TBS, where you get your actual officer training. That's also where you get your MOS choice confirmed, based on how you perform. If you don't get it, you will be assigned to something else (you get like a top 3 list).

EDIT: By the way, welcome to defence talk.
